Vegan Chocolate Pear Cake
1 1/3 cup buckwheat flour
1/2 cup Dutch unprocessed cocoa powder
2 teaspoons baking powder
1 teaspoon vanilla extract
1 cup water
1/2 cup Motts® Unsweetened applesauce
½ cup raw cane sugar
1 large Mott’s® Fresh pear, peeled and finely diced
Heat oven to 350˚F.
Mix together buckwheat four, cocoa, and baking powder
Blend together vanilla extract, water, applesauce, and sugar.
Add wet to dry ingredients and mix well to combine. Fold in diced pear.
Pour mixture in a non-stick or lined 8-inch cake pan. Bake for 20-25 minutes until a toothpick inserted comes out ALMOST clean.
