Vegan Apple Sweet Potato Soup
2 tablespoons coconut oil
2 ribs celery chopped
1 leek, green top removed, diced
1 bunch green onions, sliced
1 tablespoon fresh thyme
1 teaspoon sea salt
3/4 teaspoon black pepper
2 large cloves garlic, minced
1 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon ground cumin
5 extra large sweet potatoes, peeled and diced
4 Mott’s® Fresh Gala apples, cored and diced
4 cups vegetable stock
1 cup Mott’s® Apple Juice
23 ounce jar Mott’s® unsweetened applesauce
In a large pot over medium heat add the coconut oil. Add the celery, leek, and onion. Stir while cooking until the veggies are tender.
Add the garlic, cinnamon, allspice, and cumin. Stir and cook until fragrant, about 5 minutes.
Add the sweet potatoes and apples, stirring to coat them with the contents of the pot. Then add the vegetable stock, applesauce, apple juice, fresh thyme, sea salt, and pepper.
Cover and simmer for 30 minutes or until tender,
In batches, carefully puree the contents of the pot in a blender or use an immersion blender. Return to pot and heat through.
Serve with garnish of chopped apples and fresh thyme if desired.
