Slimmer's Citrus Salad
Serves: 4

Ingredients:
1 head Iceberg Lettuce
2-3 Large oranges
2 Mott's® Fresh Pears (ripe)
1 Spanish sweet onion (medium), sliced
1/4 c Cold water (for Dressing)
1/3 c Instant nonfat dry milk (for Dressing)
1-1/2 c Small curd, low-cal, low sodium cottage cheese (for Dressing)
1/4 c Blue cheese, crumbled (for Dressing)
3 T Lemon juice (for Dressing)
3/4 t Onion powder (for Dressing)
1/4 t Garlic Salt (for Dressing)

Preparation:
Core, rinse, and thoroughly drain lettuce; refrigerate in airtight container. At serving time, separate 4 to 6 outer leaves and line platter. Arrange remaining lettuce in center. Peel and slice oranges cartwheel style. Core and cut into thin wedges. Separate onion into rings. Arrange fruit and onion rings over lettuce. Serve salad with Slimmer's Blue Cheese Dressing (recipe below).

Slimmer's Blue Cheese Dressing:
Combine all ingredients in food processor; whir in stop-and-go fashion until blended and fairly smooth. Cover and chill.

Spicy Fruit Salad
Serves: 6

Ingredients:
1 Orange (large), peeled and sectioned
1 Mott's® pear (medium), cubed
2 Bananas, sliced
1 c Red or purple grapes
1/2 c Prunes, diced
1/3 c Walnuts, toasted
Spicy Yogurt Dressing:
1 cup low fat vanilla yogurt
1/4 tsp. ground cinnamon
1/8 tsp. ground cardamon or nutmeg

Preparation:
In a medium bowl, combine orange, pear, banana, grapes, prunes and walnuts. Just before serving, add dressing to fruit and toss well.

Spiced Pears
Serves: 5

Ingredients:
5 Mott's® Bartlett Pears
3 c Water
1/2 c Distilled vinegar
3 t Sugar
16 Whole cloves
4 Small slices fresh ginger root
3 Sticks cinnamon

Preparation:
Peel, quarter, and core pears to measure about 5 cups. Combine remaining ingredients in a large kettle. Bring to a boil and simmer juices for 5 minutes. Then add pears and return to a boil. Simmer 15-20 minutes longer. Serve warm or refrigerate and serve chilled. Keeps well for several days.

Pear and Grapefruit Salad with Mint
Serves: 8

Ingredients:
2 Grapefruit, peeled and sectioned
4 Mott's® Fresh Pears, peeled and cut into wedges
1 8 oz. can apricot halves, drained (juice-pak)
1 c Seedless grapes
1 c Plain low-fat yogurt
2 T Honey
2 T Chopped, fresh mint (or 1 t dried mint)

Preparation:
Peel and section grapefruit, reserving 1 T rind and 1 T juice for use in dressing. In medium bowl, combine fresh grapefruit, pears, apricot halves and grapes. Cover and chill.

For Mint Dressing:
In small bowl combine reserved rind & juice and remaining ingredients. Mix well. Cover and chill.

To serve, arrange the fruit in individual serving bowls. Serve the mint dressing on the side.
